Slow Cooker Breakfast Casserole


Breakfast casseroles {we like to call them Egg Bakes here in the midwest} are a favorite anytime meal in our house.  They are especially handy when hosting  guests because everyone can eat a hot breakfast at the same time.  

One of my favorite bloggers, Iowa Girl Eats, recently posted a Jimmy Dean Breakfast Casserole that looked similar to my favorite Egg Bake recipe, only it cooks overnight in a slow cooker!  Genius!!!  An overnight slow cooker breakfast is perfect for Thanksgiving and Christmas mornings.   Let breakfast make itself while you sleep a little longer and keep the oven free.  Use your family's favorite vegetables, cheese and meat.    

Slow Cooker Breakfast Casserole

1/2 pound breakfast sausage, cooked, crumbled
15 ounces frozen shredded potatoes (equivalent to about 4 medium potatoes)
1/2 cup diced onion or 6 sliced green onions
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
1/2 cup diced mushrooms
2 cups cheese, cheddar or colby jack blend
16 eggs, beaten
3/4 cup 1% milk
1/2 tsp salt
1/2 tsp ground black pepper
1 1/2 tsp ground mustard

Butter a 6 quart slow cooker.  Layer in order, half the hash brown potatoes, sausage, vegetables then cheese.  Repeat with remaining hash brown potatoes, sausage, vegetables and cheese.  Blend eggs with milk, salt, pepper and ground mustard.  Pour over layers in slow cooker.  Cover with lid and cook on high for 4 hours or on low for 8 hours until eggs are set and hash brown potatoes are cooked.

*note: My slow cooker cooked much faster {about 5 hours on low} because I used my largest crock and the mixture only filled 1/3 of the crock, AND I used fresh grated potatoes, not frozen.  All slow cookers cook a bit differently, but grated potato will cook much faster.  I might try a 3-4 quart slow cooker next time for overnight cooking, or make sure I use frozen hashbrowns.  Buttering the slow cooker resulted in the casserole scooping out nicely.  Casserole also stays piping hot for a considerable time {1 1/2 hours} after turning off the heat.
